{RECIPE} Healthy Dips

Who here loves to dip their food?! *ME!* I could eat my weight in homemade guacamole, brushetta (will share this recipe in the future), hummus and more! Dips are super easy to make with almost ANY vegetable of your choice and great for healthy snack options. Sub the chips for chopped veggies on the side such as carrots, broccoli, cauliflower, celery, etc….

For the recipe below sub in ANY roasted vegetable of your choice (beets, chickpeas-hummus, cauliflower, butternut squash, purple sweet potatoes, OR whatever your heart desires!!!! Use the following recipe from healthyish when blending your dip. *TIP* Use a food processor or powerful blender to get a creamy smooth texture.

FLAVOR COMBOS:

beets + garlic // carrots + sweet potatoes // black beans + jalapenos // butternut squash + leeks

Roasted Vegetable Dips

Ingredients

2 cups roasted vegetable of choice

1 cup full-fat plain greek yogurt

1/4 cup lemon juice

2 tbsp tahini

2 tbsp water (add more to get the consistency you desire)

1 tbsp extra virgin olive oil *I LOVE getting my EVOO from the Virgin Olive Oiler-so MANY FLAVORS!!!

Salt + Pepper

Instructions

Blend the roasted veggies, greek yogurt, lemon juice, tahini, and water.

Once smooth, blend in the EVOO

Add salt + pepper to taste
